Experienced Leadership Team
Our Co-Founders, Ben Cleary-Corradini and Theo Roduner have very strong professional backgrounds spanning the commercial and hospitality world.
Ben, as our Company Director, comes from a ‘Big 4′ Management Consulting background and is an entrepreneur with a track record of successfully launching and growing Italian food ventures. Ben holds a Bachelor of Commerce & Master of Business from UQ Business School.
Theo, as our Group Executive Chef, has over 15 years of experience as an awarded Executive Chef & Restaurateur and has curated our innovative and delicious menu. Theo oversees all gnocchi and sauce production for the group and has an obsession for food quality and consistency.
Both founders, with their complementary skills sets and shared passion for Italian cuisine, have worked together since 2015 to develop the Gnocchi Gnocchi Brothers business model, brand and franchise system. Ben and Theo are now dedicated to ensuring franchisees are provided with the right level of strategic and operational support to continue the successful growth of Gnocchi Gnocchi Brothers.

These challenging economic times are changing the game for everyone! As a business it means we must be open to more than one revenue stream. We like to call this the ‘Gnocchi Hustle’; that is our ability to chase business instead of waiting for it to come to us. It means being innovative and open to every opportunity.
As an early adopter of third-party delivery platforms (UberEats, Deliveroo, DoorDash, MenuLog etc) we have cemented ourselves as a staple and affordable food delivery option in each of the territories we operate. We have also continued to perform strongly even without our dine in trade, during times of lockdown.
In addition, to supplement our normal trade (of dine in and takeaway) we also focus on attracting large catering orders for private and corporate events and parties and supplying both elite and local sporting teams for their pre and post ‘carb loading gnocchi fix’.

STEP 1 - Register your interest
Register your interest for the location that you are keen to franchise. Simply fill in the details and we will be in touch with you.
Step 2 - Applicaiton Form
We invite you to complete an application form that evaluates your ‘franchisee fit’ and your drive to become a successful Owner/Operator.
Step 3 - Online Meeting
Once your application form is complete we’ll organise an online meeting with the Co-Founders & Management team where you’ll get the chance to ask us about the process and anything that’s on your mind.
Step 4 - Holding deposit paid and conduct 'Trial' shifts in our locations
After you transfer a refundable holding deposit, we will put you through our in-store assessment.
Over one week you will be exposed to the back of house, front of house and day to day business management tasks so you can then make an informed decision before you enter into your franchise agreement with us.
Step 5 - Legal & Franchise Agreement Signed
We’ll provide you with all the legal documentation, the due time to process your thoughts, and all the information you need to enter into a business relationship with us. Should you wish to proceed with us your franchise fee is paid and we are on our way. If you prefer to not proceed your holding deposit will be refunded to you.
Step 6 - Site selection & lease negotiation
Once the formalities are complete we’ll work closely with you to help select and negotiate the tenancy for a suitable site in one of our targeted territories. The site selection will be based on meeting our strict criteria of success factors that we have developed to minimise location failure.
Step 7 - 'Fit-Out' and Pre-Opening Training
We will follow each step of the ‘fit-out’ (build) of your new Gnocchi Gnocchi Brothers outlet in your chosen location.
During the ‘fit-out’ stage we will also commence your essential Owner/Operator training in one of our stores where you will be coached by one of our General Managers before you are ready to open your own doors.
Step 8 - Opening and ongoing support
After running a marketing campaign to gain local support we then stay with you for up to a month to ensure you are trained, competent and confident. Our ongoing support also includes running quarterly meetings with other franchisees and one-on-one bi-annual business reviews to help you successfully run your Gnocchi Gnocchi Brothers location.
No cooking experience is required however being passionate about hospitality and wanting to be a hands-on owner operator is essential. We also look for individuals with great leadership and business management skills, a positive attitude and a willingness to learn.

Meet Gerry, a brilliant Franchisee originally from Mexico with little hospitality experience. Gerry started with us in 2016 as a cook in our Paddington restaurant while completing his post graduate studies part time. Over the years Gerry worked closely with Ben & Theo absorbing and learning each aspect of the business before he was able to successfully open his first Gnocchi Gnocchi Brothers restaurant in South Bank, Brisbane. After running the South Bank location for over a year he was then ready to open his second store located on James Street in New Farm, Brisbane. - What do I need to become a Franchisee?
If you have a passion for hospitality and customer service, strong business acumen and great leadership & people management skills then you have what it takes to become a successful franchisee with Gnocchi Gnocchi Brothers.
You’ll also need to embody a strong work ethic and be committed to work at least 38 hours a week in the business for the first 12 months of trade. This will give you the necessary foundation to understand each element of the business to ensure it runs optimally before you look to opening more locations.
You’ll also need access to the adequate funds / capital requirements to open a location.
- What do I get by becoming a Gnocchi Gnocchi Brothers Franchisee?
By becoming a Gnocchi Gnocchi Brothers Franchisee you become your own boss and join a growing family of business owners who benefit from a strong and growing brand and an excellent support system.

- Do I need to work in the Restaurant?
Yes, we believe that the best franchisees are those who are owner-operators for at least the first year of trade. Not only will this benefit you financially, as you will be able to draw your own wage from the business, but it will give you a closer understanding of the key success factors that drive profit and returns to you.
- How much will it cost me?
This depends on the location, size and type of restaurant model you open.
Our initial franchise fee regardless of which restaurant model you choose is $50K.
The necessary shop fit-out costs are dependent upon size and location and the deal structure we are able to negotiate with the landlord.
To give you an idea, the cost to refurbish a pre-existing restaurant can be between $50K to $150K while a brand new empty shell location will likley cost approximately $250k. The cost of the fit-out may or may not be subsidised by landlord contributions.
In reality you’ll need access to a minimum of approx. $100K to a maximum of approx. $300K to cover your initial franchise fee, fit-out and startup costs.
In addition, You’ll also need a minimum starting working capital bank account (before trade commences) of $30K.
- What are the ongoing costs/royalty fees?
We offer one of the most generous ongoing fee structures compared to other food franchise brands:
Royalties are charged at 7% of revenue and a marketing levy is charged at 1% of revenue.
A full list of operational day to day costs will be provided to you so you can conduct your own due diligence and make an informed business decision to calculate your expected return on investment.
- Can I own more than one location?
We encourage our Franchisees to build up to become multi-site owner operators and to do this over a planned time frame.
After running your first location successfully and profitably for the first 12 months you will need to demonstrate that you can delegate the day-to-day management of your first store and have the skills and attributes to be a multi-store owner/operator before opening further stores.
We equally support those franchisees who prefer to stick to a solid single site business.
- How are locations selected?
Gnocchi Gnocchi Brothers scouts and reviews the suburbs where we believe our brand will perform strongly. The final site selection is made after assessing a shortlist of sites across a number of key location criteria.
- What support do I receive as a Franchisee?
As a Franchisee we will work side by side you to ensure adequate training is provided to you and your team before opening the doors and during the first month of trade. You’ll also receive ongoing support and assistance from our Support Office so you are set up to drive the business to reach your business goals.
